Beef & Red Wine Stew

I made this stew with dumplings for a valentines dinner at home. It goes great with green beans, creamy mashed potato and a glass of red wine.

Ingredients

25g Butter
2 Large Onions
4 Garlic Cloves
3tbsp Plain Flour
600g Diced Beef
2tbsp Olive Oil
3 Bay Leaves
300ml Red Wine
2tbsp Tomato Puree
300ml Beef Stock
1 Large Carrot
55g butter
100g Self-Raising Flour
2tbsp Water

Method

Heat oven to 130C fan. In a large, heavy-based flameproof casserole dish with a lid, melt the butter over a medium heat. Add the onions and garlic, cook for 10 mins until starting to brown, then transfer to a small plate. Put the flour in a large plastic food bag with plenty of black pepper. Add half the beef, shake to coat, then remove, leaving some flour in the bag. Add the rest of the beef and shake to coat in the remaining flour.Heat the oil in the same casserole dish you cooked the onions in (there’s no need to clean it first). Add the beef and bay leaves, and fry until the meat is browned all over. Pour in the wine and return the onions to the dish. Add the tomato purée and stock, stir and return to a simmer. Cover with the lid and put in the oven to stew for 1 hr.

After 1 hr, add the carrots s and return to the oven for another hour. Taste the meat – if it’s tender, remove from the oven. If it’s still a little firm, cook for 30 mins more and test. Rub with fingers the butter and flour together.
Add in the water and stir with spoon then use hands the form dough and divide in to four balls. Place the balls on the top of the stew when there is 25mins left of cooking time. Enjoy.

Cheesecake

Cadbury whisper cheesecake made at home. Really quick recipe but must be left for 6 hours minimum in the fridge.

Ingredients:

Base,
300g Crush digestive biscuits
140g Melted butter
Filling,
300ml Double cream whipped
1tsp Vanilla paste
450g Cream cheese
150g Icing sugar
150g Whisper bites (or any other chocolate you like)

Method:

  1. Mix biscuits and butter together
  2. Spread over the base of a 9” tin and press firm
  3. Mix whipped cream, vanilla, cream cheese and sugar together
  4. Fold in the Whisper bites
  5. Spread over the biscuit base
  6. Top with bites to decorate
  7. Place in the fridge for 6hours minimum, ideally over night

Of course you can add whatever chocolates you like inside and on top. This mix is basic and quick to carry your favourite treats. Enjoy.

Pizza

Goats cheese and jalapeño pizza, all homemade so perfect for children and healthy eating 😁

Ingredients:

350ml Warm water 110°f
2 1/4tsp Active yeast
500g Strong white flour
2tbsp Oil
2tsp Salt
1tsp Sugar

Method:

  1. Pour water in to the mixer bowl along with the yeast and leave for 5mins.
  2. Add the flour, salt, sugar and oil to the mixing bowl.
  3. Slowly mix together with a dough hook.
  4. Increase speed slightly and knead for 10mins.
  5. Oil another bowl and place the dough ball in side then cover with cling film. Leave for 90mins in a warm place.
  6. Split the dough in half and stretch out two pizza bases.
  7. Leave for 10mins to relax.
  8. Heat up the oven to 225c.
  9. Add your toppings to your pizza and cook for 12 minutes.
